Earworm for the post-St Patrick's Day celebration....

Once you've tasted Colcannon--floury mashed potatoes with cabbage, bacon, scallions, & a big knob of butter--your St. Patrick's Day menu will never be the same again. I used the leftover corned beef from March 17 instead of bacon, but I think the bacon would be better!!

  2. Kay, it's yummy, all right. But y'know what? I've been eating Salvadorean and Spanish food for a while here in DC, and the Irish stuff tastes very BLAND. There's a challenge!

  3. Joared: Bland but powerful! I find I sleep well and wake up with lots of energy the next day after I eat this. I'm going to use less delicate greens (cabbage or brussels sprouts) next time. Will go for good, fresh kale, broccoli, or possibly even arugula. And I'll be sure to add garlic to the greens, too.
